Let us start at the beginning. You can’t have a proper picnic without a blanket. I already told you a little story about this pink picnic blanket I always take to my picnics. In case you forgot or missed it, you can check it over here. I guess I had quite a luck finding this blanket. Because you know what, finding a nice pink blanket you could take to your picnic, or even a real picnic blanket, is not that easy after all.
Honestly, I had a hard time finding nice and fashionable blankets that you could lay down on the grass this spring. Surely we want our picnic to be fashionable and stylish in all the aspects. Don’t worry I saved you some time and added all my favourite blankets into the gallery bellow. Be sure to check them. You can say me thank you later when you sit down on the blanket at your picnic.
Who needs basket anyway? What you need is a white bucket bag. Unfortunately, I haven’t got a bucket bag for myself yet. So I had to bring a small hot pink bag instead. However, I will make sure to bring a bucket bag the next time. I already picked my favourite ones. You can find them in the galleries bellow. Be sure to browse through the bags. Ps. A click to a bag will take you straight to the store.
FOOD and DRINKS
What would a picnic be without a food and drinks, right? No matter how much we love Rose Champagne, I advise you to swap it this time. And try something greener for a change. Not that we don’t like rose anymore. All the contrary.
First about the cake. It’s vegan, and it’s lime and raspberry cake. I bought it in one of the most beautiful patisseries in Europe, which happens to be in Ljubljana. I can’t say this cake is worth of hopping in your plane and flying to Ljubljana merely to get this cake. Still, it is the tastiest raw and vegan cake I had so far. Although, I didn’t have plenty. Nevermind that; I know when to see and taste a good cake. And this one is let’s say solid. I don’t want to ruin your expectations.
This pink and green cake is sour sweet and creamy enough to let the fork smoothly cut through. I only wish it didn’t have the crust made of nuts. Anyway, we can always leave the crust. What matters to me most is the colour of this cake. It matches my green smoothie and my pink blanket so perfectly. Not mentioning my pink outfit.
As said you can get this cake in Ljubljana. Or make it by yourself. It shouldn’t be that hard, right? Unfortunately, I don’t have the recipe for it. But I checked some other recipes for vegan fruit cakes of the chef who made this cake. And I think we could make this cake simply by knowing the main ingredients. In the end, baking is more or less all about experimenting.
RECIPE FOR THE LIME AND RASPBERRY CAKE
The crust is seemingly made of almond flour, hazelnuts, shredded coconut, coconut oil, agave syrup, a pinch of salt. And the green part of this cake, the cream, is made from cashew nuts, limes, avocado, agave syrup (I wish this cake were without any sugar), limes, coconut water (I’m not sure about that, though). You know what to do with all these ingredients, right? Blend and rehydrate the crust. And blend and spread the cream. Or something like that. As it goes for the topping, I suppose you need to cook the raspberries and add agar-agar. Although, I need to mention, that the topping is far from beeing jelly. If you look at the photos closely, you can see it spread all over the cake.
I guess flying to Ljubljana to get this cake might be easier than making it after all. Thinking better, making this cake is a great Sunday Challenge. You know what I mean. Gather your friends, make a cake and send me a snap @veronika_lipar. I truly want to see if you can make a vegan raspberry and lime cake that would look like the one on the photos by following my instructions.
If you failed my Sunday Challenge, then you should better bring some other sweets to your pink picnic. What better than chocolate and fresh fruit. Raspberries and kiwi, of course. This is a pink and green picnic we are planning. Ps. You can find some chocolates that fit our picnic theme in the gallery bellow. Be sure to browse through the gallery to see them all. Click to you favourite chocolates, and it will take you straight to the store, where you can purchase them.
THE SKINNY B*’S GREEN SMOOTHIE
Enough about cakes and sweets, for now, I don’t want you to get diabetes simply by reading my post. What I need to bring up now, is my Skinny B*’s Green Smoothie. Brunette’s Green Smoothie, just to be clear. I shared my recipe for this green smoothie (with all instructions, ingredients, and measurements this time) in the original post about this pink picnic over here. Be sure to check it later. I’m sure you will want to drink this green smoothie every day from now on. And no it’s not just one of those green horrendous banana smoothies you can buy in almost every grocery store.
Firstly, because it has no banana in it. And secondly, because it makes you lose weight. You see, there is a good reason why I swapped champagne for a green smoothie this time. I mean I would have champagne if this was a Parisian picnic by the Eiffel Tower and I was eating Cream Brulee. But it’s picnic at the orchard, and I’m eating this, vegan yet rather sweet cake. Ps. The agave syrup must go.
PINK AND BLACK AND WHITE OUTFIT
I don’t need to mention that pink is the colour of the season again, right? I mean, this is the main reason we are having a pink picnic in the first place. So to make your pink picnic a fashion event, you must wear pink outfit. With an edge, of course. Remember, even though we are wearing pink ruffles, eating a cake and drinking a smoothie instead of champagne, we are all grown up, and not little girls. You should read more about how to wear this style here. Also, be sure to check my favourite pink outfits you should wear to your spring picnic in the gallery bellow. And don’t forget to browse through the it sneakers of the spring.
Almost forgot to mention the flowers. Yes, you need them, too. I brought tulips this time. And no, I didn’t steal them from my neighbour’s garden. Although, thinking better, this isn’t a bad idea at all. Tulips in my neighbour’s garden are much more beautiful than the one I bought at the store. A little note for me. Don’t buy flowers at the grocery store.
